Enjoying Anguilla!
While I was lying in the sun as much as I could the S.O. was off fishing on a small fishing charter boat. He went out several times and he did catch some fish, red snapper. The captain and crew helped him clean it and he brought it back to the villa with him and we cooked it for dinner, and it was yummy!
One day I stopped and talked to a nurse at the Princess Alexandra Hospital for a friend of mine. At that time I was an office manager in a hospital and one of the girls I worked with, and had traveled to the Caribbean with many times was a nurse and she was interested in finding out if they used traveling nurses. Unfortunately, she said they didn't. Apparently it's still very hard to get a job on Anguilla if there is an Anguillian that can fill the job. It's not impossible, but not easy.
Anyway, one of the first beaches we found was Junk Hole. It had a wonderful restaurant called the Palm Grove Bar & Grill which was, and still is owned by Nat Richardson. It was a treasure. We had the best fish for lunch, and the freshest too. We actually watched Nat's friend catch it. This was a very small restaurant, built with 2x4's and plywood in case Nat had to take it down in a hurry in case of hurricane. Hmm, that also makes me think of Smitty's in Island Harbor. Way back when he actually had quite a large establishment on the beach.
